Ingredients

  • Four large bell peppers (any color), tops removed and seeds removed
  • One tablespoon olive oil
  • One onion, finely chopped

  • 1 pound ground beef (or ground turkey)
  • 1 cup cooked rice (white or brown)
  • One can (14.5 ounces) diced tomatoes, drained
  • One teaspoon dried oregano
  • One teaspoon dried basil
  • Salt and pepper, to taste
  • 1 cup shredded cheese (such as cheddar, mozzarella, or a blend)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a baking dish large enough to hold the stuffed peppers.
  2. Prepare the Bell Peppers:
    • Cut the tops off the bell peppers and remove the seeds and membranes from inside. Rinse the peppers under cold water and pat dry with paper towels. Set aside.
  3. Prepare the Filling:
    • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened and fragrant, about 3-4 minutes.
    • Add the ground beef to the skillet and cook, breaking it apart with a spoon, until browned and cooked through.
    • Stir in the cooked rice, diced tomatoes, dried oregano, dried basil, salt, and pepper. Cook for an additional 2-3 minutes to allow the flavors to meld together.
  4. Stuff the Peppers:
    • Place the prepared bell peppers upright in the greased baking dish.
    • Spoon the filling mixture evenly into each bell pepper, pressing down gently to pack it in.
    • If desired, sprinkle shredded cheese on top of each stuffed pepper, covering the filling.
  5. Bake the Stuffed Peppers:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 30-35 minutes, or until the peppers are tender and the filling is heated through.
    • Remove the foil during the last 10 minutes of baking to allow the cheese to melt and lightly brown.
  6. Serve:
